Spiced French Toast

1: For the compote, pit the cherries then add into a saucepan with the remaining ingredients. Pop the lid on to bring to a boil, then remove the lid and simmer, stirring occasionally.

2: When the cherries have softened, use a potato masher to mash well and continue to simmer until thickened (total cooking time about 25 minutes). Transfer to a jar and allow to cool.

3: For the batter, combine all of the ingredients in a deep plate and whisk until well combined.

4: Heat a few teaspoons of butter or oil in a large frypan over medium heat to lightly coat the surface.

5: Dip your slices of bread into the mixture and allow each side to soak for about 15 seconds till all of the bread is well coated.

6: Transfer into the preheated pan and cook over medium heat for about 2-3 minutes on each side until golden. You may have to do this in 2 batches depending on the size of your pan.

7: Divide onto plates and top with yogurt, cherry compote and fresh berries. Dust with icing sugar and enjoy!
