Roast Cherry Tomato Pasta

1: Preheat your oven to 180°C. Add the tomatoes, minced garlic, olive oil, balsamic vinegar, chilli flakes, basil, oregano and a big pinch of salt and pepper into a lined baking dish. Toss well to coat and roast in the oven for 35 minutes until golden and softened.

2: In the meantime, bring a large pot of salted water to the boil. Cook the Fibre Fest Pasta according to packet instructions, reserving 1/2 cup pasta water on the side before draining.

3: Remove the tray from the oven and add it into a pan along with the cooked pasta and a splash of the pasta water (start with 1/4 cup and adjust from there). Cook over high heat for 30 seconds until thickened and glossy.

4: Serve immediately with fresh basil and vegan parmesan. Enjoy!
