A delicious and healthy mushroom stir-fry recipe using mixed mushrooms, ginger, garlic, and a flavorful sauce, perfect for vegan and plant-based diets.
Clean and slice your mushrooms. Don’t slice them too thin as they will cook down slightly.
Add water to fill the base of your pan (enough to submerge the mushrooms) and bring to a boil. Add in your mushrooms and boil with the lid off.
You can choose to either completely boil off the liquid until the pan is dry or drain it off at some stage.
Add a splash of oil into the pan and fry mushrooms until golden. Add in ginger, garlic, chilli, and the white parts of the green onion.
Fry for another minute until fragrant.
Add in soy sauce, oyster sauce, dark soy sauce, sugar, and pepper, and toss well to coat. You can add 1-2 tbsp of water here if needed.
Turn off the heat and add sesame oil. Garnish with green onion and sesame seeds. Serve!
