A refreshing Chinese cucumber salad made with garden-fresh cucumbers and a blend of savory flavors. This salad is complemented with black vinegar, soy sauce, garlic, and a kick of chili oil, making it a perfect side dish for dumplings or any meal.
Wash your cucumbers then slice off the ends.
Using either the handle of the knife or the flat side of a cleaver/large knife, smack down the cucumbers until they break open. Then cut into bite-sized pieces.
Add into a bowl and sprinkle some salt over to coat every piece. Set aside for 5 mins then rinse and drain well.
In another bowl, add in the vinegar, soy sauce, sesame oil, sweetener, garlic, and chili oil. Pour into the cucumbers and mix well to coat.
Refrigerate until ready to serve. (Let them sit for a while for better flavor.)
Transfer onto a plate, spoon on all of the sauce and garnish with sesame seeds and extra chili oil. Enjoy!
